Cilantro Lime Chicken

This is another one of those basic recipes that you can find all over the Internet. I especially like this one from dishinaboutnutrition.wordpress.com  because she doesn't use a taco mix for flavouring. (These usually  contain all kinds of ingredients we really don't want to be eating.)

This cooked chicken is most often used as a taco filling, but I like it as a main dish with vegetables.

It could alternatively be served wrapped in lettuce leaves, or just on a salad with more salsa and slices of avocado.

At http://kileejohnson.com She serves it in a collard leaf which looks kind of interesting, but as collards aren't available where I live, I have never tried that.

Ingredients :

- 2 ½ lbs boneless skinless chicken breasts
- 1 ½ cups salsa
- 2 limes
- 2 tablespoons of chili powder
- ½ teaspoon of cumin
- A dash or two of cayenne pepper
- A dash of salt and fresh ground pepper
- About 12 full sprigs fresh cilantro


- Place rinsed chicken in crockpot and add juice from both limes, chili powder and salsa. (save lime rinds for step 2)
- Tie or band cilantro together and drop on top of chicken along with lime halves (these will all be fished out, later
 - Cook on low for 8-10 hours.
- When tender enough to shred, remove lime halves and cilantro, and shred in pot using two forks. Stir well and add remaining seasoning. - Continue to cook on low and simmer about 30 minutes.

There is one other option that I know of for Paleo tacos, and that is this version from  Mark Sisson. He gives a recipe for a home-made taco seasoning and a recipe for home-made tacos that really looks delicious, but I have to admit I personally haven't had much luck with this recipe. I find the taco seasoning too overpowering, and the taco too greasy. At some point I think I'm going to play with making the dough and then baking it in the oven instead of frying it, but that has to go on my To Do list for the future.
