Paleo Chicken Piccata




Today I give you yet another simple and delicious Italian dish. (What can I say?  Italians know how to cook!)  The lemon used in this dish has so many health benefits as well.

This is usually made with veal in Italy but in North America the chicken version is more popular.  Some versions have you flour the breasts before cooking but this really isn't necessary.  Making this dish without the flour will make it a Paleo chicken recipe - and it will taste just as great.

Even though North Americans usually serve this with some kind of starch, in Italy it's considered a "secondo" or second course and served after the pasta with just vegetables, making it a great Paleo meal.

This is also a great backup meal to have in your repertoire.  When you need a quick meal and don't have time for a trip to the grocery store, if you keep the basic ingredients in your pantry and freezer you'll be able to put together this delicious main dish in a flash.


Paleo Chicken Piccata

Ingredients :

-  4 skinless and boneless chicken breasts
-  salt and ground pepper
-  2 tablespoons olive oil
-  1/4 cup white wine
-  2 tablespoons capers
-  juice of 1 lemon
-  1 tablespoon butter (or ghee)


Directions :

-  Flatten the chicken breasts by cutting them in half, putting between 2 layers of plastic wrap, and then pounding with a mallet until 1/4 inch thick.  Season with salt and pepper.
-  Add olive oil to a large skillet, place over high heat, then add as many of the chicken breast slices as will fit without overlapping.  Brown for 2 minutes on each side, then set aside in a warm oven.
-  To make the sauce, reheat the skillet over medium heat.  Add the wine and deglaze, reducing for about 2 minutes while constantly scraping the browned bits of the bottom of the pan.  Stir in capers and lemon juice, then remove from heat and add the butter.  Stir until melted.
-  Pour the sauce over the chicken and serve.


Even though it isn't necessary to be sitting outside to enjoy this meal, it always reminds me of sunny days and lemon groves.
