Bacon covered Halibut

I'm sure you've all heard the Mary Poppins song "A spoon full of sugar helps the medicine go down."  Well here is my version.  For those of you who don't particularly like fish but know you should eat it because it's so good for you, why not cover it with something everyone loves - bacon!

There are many ways you can serve this.  One is to pan-fry your halibut and then top it with bacon as pictured above.

Or you can completely wrap the fillets in bacon (especially appealing to kids) and bake it in the oven.  I always pre-cook my bacon until it's half done before wrapping the fish.  That way the fish doesn't get overcooked.  15 to 20 minutes in a 375'F oven should do it, or you could cook it on the barbecue so the bacon becomes even crispier.

This also makes a great appetizer when cut into bite size portions.  After all, bacon wrapped around just about anything is delicious!

And finally, for a fancy dinner dish, you can wrap halibut steaks the way you would beef.  Cook on the barbecue and serve on creamy mashed cauliflower with a few steamed asparagus spears, a creamy mushroom sauce, and a lemon wedge.

You will have a dish that not only looks beautiful and impressive but is also incredibly good for you.  A win-win combination.
