Halibut with Capers and Cherry Tomatoes

As I wrote in my post on why we should all eat more seafood, Halibut is a great fish to eat regularly. And if you're growing cherry tomatoes in your garden you probably have a glut of them right now, so this recipe should be very timely.

In some areas Halibut is not very well known, so many people don't know how to cook it, but because it's relatively mild it lends itself to lots of flavourful toppings, and this is one of the tastiest.

Ingredients :

-  2 lbs. of halibut fillets
-  1/4 cup of olive oil
-  1/2 cup chopped fresh parsley
-  1 onion, finely diced
-  2 cups of cherry tomatoes, cut in half
-  2 tablespoons of capers
-  2 tablespoons of chopped garlic
-  sea salt and ground pepper to taste

Directions :

  • Preheat the oven to 425'F
  • Wash the halibut fillets and pat dry, then cut into serving size pieces and place into a large baking dish so they will all fit in one layer.
  • Mix the rest of the ingredients and pour over the halibut, spreading it evenly over all the fillets.
  • Bake until the fish is slightly opaque in the center. (approx. 20 - 25 minutes)
  • Remove from the oven and let stand for 5 to 10 minutes before serving otherwise the fish will fall apart when you try to pick it up.

If you don't have cherry tomatoes you can use diced regular tomatoes or even canned diced tomatoes for a similar taste.
