Just as lemon alone is wonderful with chicken, the addition of thyme adds a different and equally wonderful flavour. Here is another way to use that thyme plant that's growing in your garden. This recipe serves 4 very generously. (Image from bettycrocker.com)
Ingredients :
- 4 large chicken breasts, on the bone and with the skin attached
- 1/4 cup of melted butter
- 1/4 cup of fresh lemon juice
- 1 tablespoon of chopped garlic
- 2 tablespoon of fresh chopped thyme (or 2 teaspoons of dried)
- 1/2 teaspoon of paprika
- salt and ground pepper to taste
Directions :
- Preheat the oven to 425'F
- Place the chicken breasts on a rack in a baking pan or casserole, skin side up.
- Combine the rest of the ingredients and spoon the sauce over the breasts, making sure they are well covered.
- Bake for 40 to 45 minutes or until juices run clear.
- After 20 minutes baste the chicken again with the juices in the pan.
This is a beautiful dish to serve at a dinner party garnished with lemon slices and sprigs of thyme. You can also use this marinade to cook a whole chicken as in this example from inspirededibles.ca
