Pecans are not only delicious but they can also be a low carber's best friend since, compared to most snack nuts they have the least carbs.  According to weightbydate.com  a cup of pecans has only 14 grams of carbs compared to 16 grams for walnuts, 18 grams for macadamia nuts, 19 grams for hazelnuts or filberts, 29 grams for almonds and 38 grams for cashews.

They also have many health benefits as this chart shows.

When you think of pecans you usually think of desserts (I gave you a very easy one here) but here's a great recipe that combines this terrific nut with something else that's also good for you - fish.

Georgian Pecan-Crusted Fish Fillets (or Chicken Breasts)

Like many popular recipes, there are many versions of this dish, many of which require dipping in egg and breading, but the way I prefer to make it is simpler and  - as far as I'm concerned - tastier as well.

Ingredients :

-  4 fish fillets (You can use trout, salmon or any other firm fish) or 4 thinly pounded chicken breasts
-  1/4 cup of butter
-  1/2 cup of chopped pecans
-  1/2 cup of chopped onion
-  1/2 cup of chopped celery
-  1 teaspoon rosemary
-  sea salt and ground pepper to taste

Directions :
  • Pan-fry the fish fillets or chicken breasts in the butter and once cooked remove to a plate and keep warm.
  • Add the rest of the ingredients to the pan and cook over medium high heat until the onion are translucent.
  • Serve the cooked vegetables - and don't forget the rest of the browned butter - on top of the  fillets.
Alternatively, you can bake your fish or chicken in the oven, then make the topping to serve with it.

In the US, Georgia is known for it's pecans.  The season is usually October to January, but at any time of the year, driving down a road shaded by pecan trees is truly a beautiful, peaceful experience.
