Pineapple Stir-Fry

When we eat Paleo, especially Low Carb Paleo, we don't tend to eat many fruits other than berries.  This is why making a stir-fry once in a while where you use a little fruit is a great way to still indulge without having our blood sugar go sky high.

This is a particularly great recipe that lends itself to many interpretations.  I will give you my basic recipe, but remember that you can substitute whatever vegetables you have on hand, and you can make this with either seafood, poultry or meat.

Ingredients :

-  1 20oz can of pineapple chunks (or an equal amount of fresh pineapple)
-  3 tablespoons of gluten-free soy sauce
-  1 tablespoon of arrowroot powder
-  1 tablespoon of vinegar
-  1 teaspoon of red pepper flakes (optional)
-  1 lb. pork tenderloin, cut into strips
-  1 tablespoon of chopped garlic
-  2 tablespoons of minced ginger (or 1 teaspoon ground)
-  1 onion, cut into wedges
-  2 medium carrots, slivered
-  1 red pepper, slivered
-  2 cups of snow peas

Directions :
  • Drain the pineapple, reserving 1/4 cup of the juice.
  • Mix the arrowroot powder with a tablespoon of water until you have a paste, then gradually add 1/2 cup of water.
  • To this arrowroot mixture add the reserved juice, soy sauce and vinegar and set aside.
  • In a large skillet or wok, brown the pork in hot oil. 
  • Add the garlic, ginger and hot pepper flakes and cook for one minute more. 
  • Add the onions and carrots and cook for a couple of minutes until the onions are starting to soften.
  • Add the red pepper and snow peas and cook for one minute.
  • Add the sauce mixture and cook until it starts to thicken.
  • Add the pineapple, heat for about half a minute more, then serve.
This serves 4 and is great served over cauliflower "rice" or Miracle rice.

  1. I love stir fry so much, but I haven't made on in so long! I think this one will help me to cook stir fry again. I will now save this and make this when I have an extra time.
