Chicken Pomodoro

Here is yet another terrific Italian recipe for serving chicken.  Perfect for this time of year when all your tomatoes are ripening.  Don't be afraid of using Vodka or white wine even if you are cooking for young children.  All the alcohol evaporates in the cooking leaving only the incredible taste.

Ingredients :

-  4 large skinless and boneless chicken breasts
-  1 tablespoon olive oil
-  1 tablespoon butter
-  1/2 cup Vodka (or white wine)
-  1/2 cup chicken stock
-  2 tablespoons fresh lemon juice
-  1 large tomato, chopped. Keep any juices.
-  2 tablespoons of heavy cream
-  1/2 cup of chopped green onions
-  sea salt and ground pepper to taste

Directions :
  • Season the chicken with salt and pepper.
  • Heat the olive oil and the butter in a large skillet over medium high heat.
  • Saute the chicken until golden brown, then remove to a plate.  
  • Deglaze the pan with the Vodka or wine and simmer until the liquid has been reduced by half. 
  • Add the chicken stock and lemon juice.
  • Return the cutlets to the pan, cover it, and let the chicken cook until it is cooked through (about 2 to 5 minutes depending on the thickness of your chicken breasts)
  • Transfer the cooked chicken to a warm plate and cover to keep warm.
  • Add tomatoes and their juices plus the cream to the sauce in the skillet and stir until heated through.  
  • Pour over the chicken and sprinkle with the chopped green onions before serving. 

Now I have a confession to make.  I often take a short cut that makes this recipe even simpler to make.  My secret?  I use Seeds of Change Organic Vodka Americana sauce.

Tomato puree*, tomatoes*, heavy cream*, onions*, olive oil*, lemon juice*, Asiago cheese* (cultured part skim milk*, salt, microbial enzymes), vodka*, sea salt, garlic*, oregano*, parsley*, locust bean gum*, guar gum*, black pepper*.

Even though I very rarely used processed foods, this brand is organic and doesn't contain a long list of additives, so it's a great item to have in your pantry for those nights when you want to make something as quickly and easily as possible.  I have tried many of their sauces, including some of their curry sauces, and I can recommend them all.  When you are really in a hurry, having these in your pantry can't be beat.

To make the recipe above, cook the chicken in the olive oil and butter, add a cup of Vodka Americana sauce to the pan along with 1/2 a cup of chicken stock or water, and then cover and simmer the chicken until cooked.  You can top this with some chopped tomato and fresh basil to give an even better flavour.
