Rosy Applesauce

This is one of the tastiest, easiest, and most good-for-you applesauce recipes that I think you will ever find.  And on top of that it's probably the prettiest as well.  It gets it's lovely pink colour from the skins. Leaving them on is what makes this recipe so easy, while including the core and seeds in the cooking gives you extra health benefits as well.

Every year when my children were young I made lots of this, and I served it all year long.  Not only is it a wonderful simple dessert, it's also great served with grilled pork chops or roast pork.  There are many other recipes where you can use applesauce, and I will be giving you a few of them in the next couple of days.

This doesn't make a huge amount of applesauce, so if you want to make enough to put by - and your slow cooker is large enough - you can double the recipe.  This can also be made in a large stock pot on top of the stove, which is how I used to make it.  But for small batches, the slow cooker makes this simple, quick, and easy.

Ingredients :

-  3 lbs. of red organic apples
-  1/2 cup of water
-  1 teaspoon of cinnamon
-  1 teaspoon of nutmeg
-  1/4 cup of maple syrup, honey or coconut sugar (or to taste - this is optional)

Directions :
  • Wash the apples, then chop them up without removing the core or seeds and put them into your slow cooker.
  • Add the spices and the water, cover, and cook on low heat for 6 to 8 hours or until the apples are very soft.
  • Now place a large bowl on your counter and put a colander into it.  
  • Pour the apples into the colander and press them through the holes.  This will allow through only the apple flesh and the skins, core and seeds will remain in the colander.  You can also do this with a large sieve.
  • At this point taste the applesauce and if you think it needs sweetener, add it and mix it in well. 

If you aren't into canning, you can freeze this applesauce in large plastic containers.  Just remember to leave at least 1/2" at the top for expansion.
