Uses for home-made Tomato Sauce





Now that you have a freezer full of tomato sauce, how can you use this bounty?  Here are three quick, easy and delicious dinners you will be able to make in under half an hour.


Easy Pasta Dinner

Ingredients :

-  4 cups of tomato sauce
-  chicken or beef stock, red or white wine, or both
-  3 slices of bacon
-  1/2 lb. ground beef
-  2 cups of sliced mushrooms
-  1/4 cup of grated parmesan

Directions :
  • Thin the tomato sauce with 1/2 to 1 cup of stock, wine or both to taste.
  • Cook the bacon, crumble, and add to the sauce.
  • Cook the ground beef in the bacon fat, then add the mushrooms and cook until they start to brown.  Add all this to your sauce as well.
  • Serve over Miracle noodles or gnocchi.

Easy Swiss Steak Dinner

Ingredients :

-  2 cups of tomato sauce
-  1 package of fast-fry steaks
-  1 cup of sliced mushrooms
-  1/2 an onion, sliced

Directions :
  • In a large skillet, saute the steaks in some olive oil, coconut oil or butter until browned.  Remove to a plate.
  • Add the onions and mushrooms to the skillet and saute until starting to brown.  Add the tomato sauce and mix, scraping the bits of the bottom of the pan. (That's where all the flavour is!)
  • Return the steaks to the pan, spoon some sauce over each, then cover and simmer on low heat while you prepare the vegetables.
  • Put some cauliflower pieces (fresh or frozen) into a microwave-safe container, add a few spoons of water, cover, and cook for 2 or 3 minutes until soft.
  • Serve the steak with some of the steamed cauliflower and a side salad of greens and cherry tomatoes.

Easy Curry Dinner

Ingredients :

-  2 cups of tomato sauce
-  2 cups of cooked chicken, beef or shrimp
-  1 chopped onion
-  1 tablespoon of curry powder (or to taste)
-  1 cup of heavy cream

Directions :
  • In a large saucepan, brown the chopped onion in some butter or coconut oil.
  • sprinkle the curry powder over the onions and cook for one minute until you start to smell the spices.
  • Add the tomato sauce and chicken, beef or shrimp.  Cover the pot, turn the heat down to low, and leave to simmer over low heat for 10 to 15 minutes.  If it seems very thick, thin it with a bit of water.
  • Just before serving, mix in the cream and reheat until it's warmed through.
  • Serve over cauliflower rice or Miracle rice

In the middle of winter, when you are able to create these delicious meals in minutes, you will be very glad you took the time to grow or buy some tomatoes and make this sauce.
