When you need a special occasion cake, this deep rich chocolate one will really hit the spot. Serve it layered with whipped cream and topped with a sprinkling of cocoa for a decadent treat.
Ingredients :
- 3/4 cup of coconut flour
- 1/4 cup of cocoa plus extra for sprinkling
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 10 eggs
- 1 tablespoon vanilla
- 1 cup of sweetener (honey, maple syrup or coconut sugar will all work)
- 1 cup butter, melted
- 2 cups of whipping cream, whipped to soft peaks
Directions :
- Preheat your oven to 325'F
- Grease two 9 inch cake pans with some of the melted butter
- Sift the coconut flour, cocoa, salt and baking powder into a small bowl. Set aside.
- With an electric mixer, blend eggs, vanilla, sweetener and melted butter in a large bowl.
- Add the dry ingredients to the wet ones, then blend to combine.
- Pour the batter into the prepared cake pans.
- Bake for 35 minutes, then test the centre with a tooth pick. If it comes out clean then the cake is done.
- Remove the cakes from the oven and cool on a rack until completely cold.
- Place one cake on your serving plate, cover with whipped cream, and then place the other cake on top of it. Using a sieve, sprinkle a bit more cocoa over the top of the cake.
Variation : Layer the cake with sliced strawberries (illustration from sasoc.wordpress.com ) and top with more strawberries.
