Java Roast Beef

Those of you who love your coffee will be happy to hear that coffee can also be used as a tenderizer to make a cheaper cut of beef into a really succulent meal.  Here is a great recipe that is not only easy on the wallet but also easy on time.  A few minutes of prep in the morning will have you coming home to the delicious aroma of dinner  .... ready and waiting.

Ingredients :

-  1 yellow onion, sliced
-  2 cups of sliced mushrooms
-  2 tablespoons of butter or coconut oil
-  2 tablespoons of chopped garlic
-  3 lb. chuck roast
-  1 cup of strong brewed coffee
-  1 tablespoon Worcestershire sauce
-  3 tablespoons red wine vinegar
-  1 teaspoon sea salt
-  a few grinds of black pepper
-  4 ounces of softened room temperature cream cheese

Directions :
  • In a large skillet, brown the roast on all sides in the oil. Remove and put into your slow cooker.
  • To the same skillet add the mushrooms and onions and cook until browned. Remove and put on top of the roast.
  • Add the coffee to the skillet and deglaze. (Cook over low heat while using a wooden spoon to scrape and incorporate all the brown bits from the bottom.) 
  • Remove from the heat.  Add the Worcestershire sauce, red wine vinegar salt and pepper. Mix well, then pour over the beef and vegetables.
  • Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours.
  • Carefully remove the meat from the pot onto a plate and let rest for 10 minutes before carving.
  • Meanwhile, put the softened cream cheese into a small bowl and add a couple of tablespoons of the broth.  Mix well to incorporate.  Add approximately half a cup more and mix this in well as well until you have a sauce consistency.  Add to the rest of the gravy, mixing in well.  Serve as an accompaniment to the beef.

All you need to make this a well rounded meal are a few stir-fried or steamed vegetables on the side (as shown in the photo from momcooks.net above).  After dinner, why not treat yourself to a light dessert of home-made fruit jelly and whipped cream with another cup of delicious coffee.
