John's stuffed Portobello Mushrooms





My son John is an amazing cook.  He has a true passion for it and is always finding new ways to use ingredients. It's especially great because he eats Paleo so we can exchange recipes.

Creating delicious meals out of whatever he happens to have on hand is what he is best at, and this is just one of the terrific creations he has come up with.  You have to be prepared to stray a bit from the beaten path, and just add a little of this and a little of that, because he doesn't deal in specific amounts.  But then again, that's what makes these recipes so delightfully different each time you make them.

Ingredients :

-  Onions
-  garlic
-  red peppers
-  portobello mushrooms
-  coconut oil
-  cheese (whatever you have on hand)


Directions :
  • Dice finely some onions and garlic
  • Chop a red pepper
  • Hollow out a bit of the mushroom (leaving some stem in tact) and dice.  
  • Mix the onions, garlic, red pepper and chopped mushroom and fry with a spoonful of coconut oil until browned.
  • Fill the mushrooms with this mixture and cover with cheese.
  • Heat the BBQ, then turn to low.
  • Cook the filled mushrooms until the bottoms are cooked and the cheese is melted.

I would think these could also be cooked in the oven.  Try doing them at 375'F and check after about 15 minutes.  When the cheese is melted they should be done.
