Basics : Ketchup





When you give up eating french fries, you cut down a lot on your need for ketchup, but every once in a while you find a dish where it would really be useful to have a bottle.  There are many no sugar varieties available now, but it's also very easy to make your own. (Image from finecooking.com)  

Ingredients :
-  1 - 6 ounce can of tomato paste
-  2/3 cup apple cider vinegar
-  1/3 cup of water
-  1/3 cup of honey or maple syrup
-  2 tablespoons of very finely minced onion
-  1 teaspoon of very finely minced garlic
-  1 teaspoon sea salt
-  1/4 teaspoon ground allspice
-  1/4 teaspoon ground cloves
-  1/4 teaspoon freshly ground black pepper

Directions :
  • Put all the ingredients into a medium saucepan and simmer over medium heat until thick.
  • Allow to cool, then store in a sealed container in your fridge.  If you are not going to use it all in the next week, you can also freeze this.  I freeze individual portions in an ice cube tray.

This is especially delicious with burgers.  You may have to give up the bun but you no longer have to give up the ketchup.
