Sometimes, just adding a little extra flavour can make a simple fish dinner into something special. Here is a very quick and easy topping that can do just that (image from tintitypes.typepad.com )
Ingredients :
- 3 to 4 fish fillets (sole or any other mild fish will work here)
- 1/4 cup of home made mayonnaise
- 1/2 cup of shredded or grated parmesan
- 1 teaspoon chopped garlic
- 1 teaspoon of chopped dill
- juice of 2 lemons
- seas salt and freshly ground black pepper to taste
Directions :
- Combine the mayonnaise, garlic, dill, lemon juice and salt and pepper to make a sauce.
- Place a piece of parchment paper (for easy clean up) onto a baking sheet, then lay the fish fillets on the paper.
- Pour a bit of the sauce over each fish fillet, and then rub it all over covering as much of the fillet as possible.
- Sprinkle with the parmesan cheese.
- Broil for 3 to 4 minutes, or until the fish flakes easily with a fork.
If someone in your family is an avid fisherman, this is a very nice way to serve the daily catch.
