Quick and Easy Shrimp Soup

I have given you a couple of great seafood chowder recipes that you can make in your slow cooker, but what if you forgot to start something this morning and now you're cold, wet, and in need of sustenance?  Here is the prefect recipe for you.  (Image from  

Ingredients :

-  1 cup seafood (or chicken) broth
-  1 cup of water (optional - this can be half white wine)
-  1 tablespoon of tomato paste
-  1 cup of heavy cream
-  1 cup of small cooked shrimp (or large ones chopped)
-  1 teaspoon of chopped dill
-  1 tablespoon of lemon juice
-  sea salt and pepper to taste

Directions :
  • In a medium saucepan over low heat, bring the water, broth, and wine if you are using it to a boil, then turn it down to a simmer.
  • Whisk in the tomato paste until well combined.
  • Add all the rest of the ingredients and heat for a couple of minutes until hot.  Do not boil again once you have added the cream.

You could easily keep all these ingredients in your fridge and freezer as an emergency backup.  The shrimps can be either frozen or canned and chopped dill now comes in a tube.  Just make sure you have cream and lemons (or even juice in a bottle) and this dish will only be minutes away whenever you want it.
