Here is a super easy way to make a healthy seafood dinner. This is best for the weekend because it only takes a couple of hours, but it will allow you to use your time for other things and still sit down to a delicious meal in the evening.
Ingredients :
4 cups of fresh spinach
4 salmon fillets
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 teaspoons chopped fresh dill (or 1 teaspoon dried)
2 lemons
1/2 cup of white wine
Directions :
- Put the washed spinach into your slow cooker, shoving it down to fit. It will probably take up the whole thing, but don't worry because it will cook down quite a bit.
- Place the salmon fillets on top of the spinach. (This will help keep it down.) and season with the salt, pepper and dill.
- Lay the slices of lemons over the top of the fish, then pour the wine on top of all of this.
- Cook on low for 2 hours or until the fish flakes easily with a fork.
- Serve with extra lemon wedges. Hollandaise sauce is also great with this.
