Spanish Braised chicken

Another great slow cooker chicken recipe using a combination of vegetables and flavours.  All you need is some creamy mashed cauliflower or maybe some cauliflower rice to make this a perfect Spanish meal. (Image from

Ingredients :

-  4 large boneless and skinless chicken breasts. You can also use regular breasts with bone & skin, but if you do, brown them first for best flavour.
-  3 bell peppers (a combination of yellow, orange and red will make this very colourful)
-  1 sliced onion
-  2 chopped garlic cloves
-  a large sprig of thyme (or 1/2 teaspoon dried)
-  1/2 a cup of dry sherry
-  juice of 1/2 an orange
-  12 large pitted green olives, chopped
-  sea salt and freshly ground black pepper to taste
-  1 tablespoon butter

Directions :
  • Put the butter into the bottom of your slow cooker
  • Add the chicken and season with salt and pepper.  Put the thyme on top of the chicken.
  • Add the vegetables - peppers, onion and garlic
  • Mix the sherry and the orange juice.  Pour over the chicken and vegetables.
  • Cover and cook on low for 6 to 8 hours.
