Cranberry and Orange Sauce

Cranberry sauce is the traditional accompaniment to Roast Turkey, but the versions you can buy in the store are full of sugar.  Since it's so simple and quick to make you don't have to do without.  In fact you can make it well ahead of time and keep it in the freezer until you need it.  Make a double batch, use half for Thanksgiving, and keep half for Christmas.

You can also use different alcohol to flavour your sauce.  I like sherry or port, but at (image above)  they use Bourbon, and I'm sure it's just as tasty.

Ingredients :

-  1 1l. fresh cranberries
-  the zest and juice of 1 large orange
-  a 1 1/2" piece of cinnamon stick (or 1/2 teaspoon ground)
-  4 whole cloves (or 1/8 teaspoon ground)
-  1 tablespoon freshly grated ginger root (or 1/2 teaspoon ground)
-  1/2 cup coconut sugar ( honey or maple syrup)
-  1/4 cup sherry or port .. or Bourbon (optional, but gives lots of flavour so definitely try it if you can)
Directions :
  • Chop the cranberries in a food processor, then put them into a medium saucepan.
  • Add all the rest of the ingredients except for the sherry or port.
  • Bring to a boil, then turn down the heat to low. Stir and cover the pot.  Leave to simmer on low heat for about 5 minutes.
  • Remove from heat and stir in the sherry or port, then cover again and leave to cool.
  • Once cooled,  remove any whole spices you used, then pour into a serving bowl or a freezer container.  (will freeze)
