Cheddar and Apple Pie

Here is another great (and easy) dessert alternative if pumpkin pie isn't your thing. If you have a food processor, it will almost make this pie for you.  And not only is this pie easy, it's also one of the most delicious apple pies you will ever taste.  Many years ago this pie won me a first prize ribbon at a local fall fair. The secret is the Cheddar Cheese crust :

Ingredients :

-  1 1/2 cups almond flour
-  1/2 cup of coconut sugar
-  1/2 cup butter
-  1 cup grated Cheddar cheese

Directions :
  • Put all the ingredients into the food processor and blend until they start to stick together into a ball.

To make the pie :

Ingredients :

-  1 tablespoon coconut sugar
-  1 teaspoon cinnamon
-  1 teaspoon lemon zest
-  juice of 1/2 a lemon
-  4 tart apples (like Granny Smith) peeled, cored and sliced
-  1 Cheddar cheese crust (recipe above)

Directions :
  • Preheat the oven to 350'F
  • Mix together the sugar, cinnamon, lemon zest and juice, and apple slices.
  • Press about 2/3 of the crust mixture into a greased 9" pie plate
  • Top with the apple slices.
  • Sprinkle the remaining crust mixture evenly over the top.
  • Bake for 30 to 40 minutes.
  • Cool until just warm before slicing, otherwise it's likely to crumble.
