Buttered Brazil Nuts






Paleo eaters are encouraged to eat nuts, and one of the best kind to eat are Brazil nuts. They are known as one of the richest dietary sources of selenium, and also contain a significant amount of magnesium, phosphorus and thiamine.  Including one or two of these nuts each day can significantly add to your health, and today I'm going to give you a great way to do this.

Buttered Brazil Nuts have long been a favourite in England, but I haven't seen them much in North America.  These are Brazil nuts coated in toffee and are a delicious alternative to candy.

Here is how you make them.  They make great gifts .... but make sure you make enough for yourself as well!


Ingredients :

-  2 cups of shelled Brazil nuts
-  1 cup of butter
-  1 cup of honey, maple syrup or coconut sugar

You will also need a parchment lined cookie sheet and a well washed pair of eyebrow tweezers.

Directions :
  • Put the butter and sweetener into a small saucepan over medium heat.  
  • Bring it to a boil and boil - watching carefully - until the toffee starts to thicken.  You can test if it's ready by dropping a little from a teaspoon onto an ice cube.  If it thickens, it's ready.
  • Put the Brazil nuts, a few at a time, into the toffee and turn them over to coat them well.
  • Using the tweezers, lift each coated nut and place on the parchment lined sheet.
  • When the toffee has set, place the nuts in little paper cases and store in an airtight container.
