Easy Chocolate Truffles

Chocolate truffles are a lovely decadent dessert or gift that are very easy to make.  They require a little time and effort, but the results are delicious. (Image from

Ingredients :
-  1/3 cup of heavy cream
-  6 tablespoons of unsalted butter
-  1 3/4 cups of dark chocolate chips (I love Ghirardelli 60% dark chocolate chips for this.)

Directions :
  • Bring the cream to a simmer in a small saucepan.  Add the butter and stir until it's melted, then add the chocolate chips.  Stir until these are completely melted and smooth.
  • Remove from the heat and pour into a shallow bowl.
  • Cool, cover, and refrigerate for at least 2 hours so the mixture is very firm.
  • Using a tablespoon, scoop the mixture and roll into small balls, approx. 1 inch in size.  You should end up with 30 truffles.

Choose a few of these toppings to finish.  You could do 10 each of three different toppings, or 5 each of all six.  Either will give you a nice professional looking assortment :

for chocolate dipped : Melt a couple of squares of chocolate (or about 1/4 cup of chocolate chips) and submerge each truffle into it, removing quickly, then setting on a plate to cool.  I use a couple of forks to make controlling and removing the truffle easier.

for nut covered : Roll each truffle in the finely ground nuts

for cocoa :  Roll each truffle in the cocoa

for coconut :  Roll each truffle in finely ground coconut

for coffee :  Roll each truffle in instant coffee granuals

for pistachio :  Roll each truffle in finely chopped green pistachio nuts

You can refrigerate these in an air-tight container for up to 2 weeks, or you can freeze them indefinitely.   They are wonderful to take out for an impromptu dessert. 

If giving these as gifts, place in tiny paper cups, package in small box, and refrigerate until just before giving to the recipient.  If you feel so inclined, you can get even more creative and use chocolate sprinkles and white chocolate as they have here at  .
