Breakfast Tortillas

Breakfast tortillas make a very delicious and filling meal, and when you make them with egg crepes, you get double the protein to keep you full until lunchtime.

An egg crepe with a couple of scrambled eggs, a few slices of avocado, some salsa, and a bit of sour cream will keep you full until lunch, no problem.

I used to make bacon and eggs for breakfast with all the Mexican accompaniments, but now I find it much easier to just freeze a few tortillas and scramble a few eggs.  I still like bacon occasionally, but this gives me a nice change.  Of course you could have both if you really wanted to ......

When I'm making egg crepes specifically to use for breakfast tortillas I like to add a little naco seasoning to the eggs and sometimes a teaspoon of coconut flour as well to give them a bit more body. The seasoning hides any coconut flavour, and gives it just a hint of spicy hotness that lingers in your mouth even after the meal is finished.  Just the way I like my Mexican food!
