Spicy Walnut and Raisin Cookies




When you're looking for a mid-morning or mid-afternoon treat these spicy, crunchy, and chewy cookies will really hit the spot.  And your kitchen will smell wonderful while they are baking.

If you like to use organic spices like I do, and if you have a hard time finding them in your local store - again like I do - then you will be happy to know you can get them from Amazon.


Ingredients :

2 1/2 cups almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup coconut sugar
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 to 3/4 cup raisins
1/2 to 3/4 cup chopped walnuts
1/2 cup melted butter
1 teaspoon vanilla


Directions :
  • Preheat the oven to 350'F.
  • Mix all the dry ingredients together, then add the raisins and chopped walnuts and mix so they are coated.  (This will keep them from clumping together.)
  • Mix the melted butter and vanilla, then mix into the dry ingredients to form a soft dough.
  • Form small balls and place on a parchment lined baking sheet. (I like to use a small ice cream scoop to keep the cookies all the same size.)
  • Press each cookie with a fork to flatten, then bake for 8 to 10 minutes.
  • Cool on the baking sheet for 15 minutes before removing to a cooling rack and leaving to cool completely.

Makes about 3 dozen cookies.


If you like a soft cake-like cookie you will love these.  I try to keep a container filled in my office at all times so they are available whenever I want a little something sweet.

Instead of raisins you can use chopped dried apricots or dried cranberries.  Pecans will work well if you prefer them to walnuts. And honey or maple syrup will work just as well as a sweetener. Whatever combination of chewy fruit and crunch nut you use, these are a terrific healthy snack with a cup of tea - whether you take it hot or over ice.
