Bibimbap - a Perfect Health Diet lunch





Until I read Perfect Health Diet: Regain Health and Lose Weight by Eating the Way You Were Meant to Eat by Paul Jaminet I had never heard of Bibimbap, but a little online research soon gave me a good idea of what it's all about.  According Wikipedia ...

Bibimbap (비빔밥, Korean pronunciation: [pibimp͈ap̚][1]) is a signature Korean dish. The word literally means "mixed rice". Bibimbap is served as a bowl of warm white rice topped with namul (sautéed and seasoned vegetables) and gochujang (chili pepper paste). A raw or fried egg and sliced meat (usuallybeef) are common additions. The ingredients are stirred together thoroughly just before eating.[2] It can be served either cold or hot.

I can see how this could be a good way to serve leftovers, but neither the raw egg nor the fried egg really appealed to me.

A variation of this dish, dolsot bibimbap (돌솥 비빔밥, dolsot meaning "stone pot"), is served in a very hot stone bowl in which a raw egg is cooked against the sides of the bowl. The bowl is so hot that anything that touches it sizzles for minutes. Before the rice is placed in the bowl, the bottom of the bowl is coated with sesame oil, making the layer of the rice touching the bowl golden brown and crisp.

This version seems to promise better flavours, however I can see a major problem.  I have never eaten this dish myself so I'm no expert, but I would think serving something in a very hot bowl is asking for trouble.  Also, the Perfect Health Diet recommends 3 egg yolks daily - not a whole egg - which might be a bit trickier to incorporate.

So I decided to come up with my own version .... made in a frying pan.  I used garlic shrimp leftover from last night's dinner, but you can use any leftover meat or seafood.  You can also vary the vegetables depending on what you have in your fridge, but try to use a variety of colours.  This not only looks nicer but will also give you a wider range of nutrients.  

I'm not sure what oil is traditionally used for sautéing the vegetables, but coconut oil seemed like a good choice here.  Ditto the chili sauce.  If you have the traditional chili pepper paste then use that, but San-J works for me.


EASY PERFECT HEALTH BIBIMBAP

Ingredients :

1/2 a tablespoon of sesame oil
1 cup cooked white rice ( or cauliflower rice if you're not doing this diet )
3 egg yolks, scrambled
juice of half a lime
1/4 cup chopped red onion

coconut oil for sautéing 
1 teaspoon San-J szechwan cooking sauce
1/2 cup slice mushrooms
1 cup baby spinach leaves
1/2 cup julienne celery
1/2 cup julienne yellow pepper
1/2 cup julienne carrot
1/2 cup cherry tomatoes, sliced in half
4 oz. cooked garlic shrimp

Directions :
  • Add a little coconut oil to a hot frying pan along with the chopped onion. Stir until the onion is soft.
  • Add the rice and the egg yolks.  Keep mixing until the eggs are cooked.  Remove from the heat, mix in the lime juice and sesame oil and place the rice mixture in the bottom of your serving bowl.
  • Add a bit more coconut oil to your frying pan and allow it to heat again.  Saute the vegetables one kind at a time, adding a drop of San-J szechwan sauce to each. (I left the tomatoes raw.) When cooked arrange the vegetables in a circle on the cooked rice.
  • Serve and enjoy.
This method does take a bit of time but I think it's worth it.  However you do need to be home for lunch to make it.  If you are in a hurry or taking this to work, you could just mix all the ingredients together (leaving out the coconut oil), put it all into a microwave-safe covered dish, and then nuke it just before eating.  Your choice.  It might not look as nice but it will still be delicious.

Remember, if you aren't eating the Perfect Health Diet and don't eat rice, my cauliflower rice recipe works very well with this, and will still allow you to partake in all the other health benefits of this great recipe.
