Potato Hash - a Perfect Health Diet Lunch

If you are following the Perfect Health Diet: Regain Health and Lose Weight by Eating the Way You Were Meant to Eat by Paul Jaminet, then potato hash is a perfect lunch.  It's a great way to use leftovers, has lots of variations, and tastes great. (Image from www.onceuponacuttingboard.com)

Because hash is usually served with a fried or poached egg, my recipe includes one as well plus the two extra yolks that Paul recommends.  However, if you prefer, you can just use the three yolks and skip the egg.


Ingredients :

1 large cooked potato (white or sweet) cut into chunks
1 cup of chopped up chicken, beef or seafood
1 to 2 cups of chopped vegetables (onions, mushrooms, red pepper, zucchini - your choice)
1 whole egg 
2 egg yolks, scrambled with a fork
a tablespoon of your favourite chopped herbs (parsley, cilantro, Italian mix etc.)
olive oil or coconut oil for frying.

Directions :
  • Place the cooking oil into a large frying pan over medium heat.
  • Once the oil is hot, add the chopped protein and the scrambled egg yolks and mix with a wooden spoon until the egg strands are cooked.
  • Add the vegetables and a little more oil if needed and continue stirring until everything is hot.
  • Sprinkle with herbs and move to your serving plate.
  • Add a little more oil to your pan and fry the egg until it's cooked the way you like it. Place on top of the hash and serve.
Alternatively you can poach the egg before you start frying the hash.

This is a very simple basic recipe, but there are a lot of different ways you can serve it.  At homeorganics.wordpress.com they serve their hash over arugula - a great way to have salad on a cold day. 

And at www.poorgeatswell.com the hash is served in tacos - a great alternative as well.  Since you can use rice tortillas on the Perfect Health Diet, just fold them in half and either fry them in the pan for a minute before making your hash, or toast them in a hot oven until they are browned and crispy.  Either way this is a delicious Perfect Health Diet meal - whether you have it for lunch or dinner.
