Broccoli Fries - a great way to use Broccoli Stems

Does it annoy you as much as it annoys me to throw out all those broccoli stems?  Especially when I'm paying extra for organic produce it really seems a huge waste of money.  Many times the stems are the largest part!

After playing around with a few ideas I've finally found a great way to use them - by making fries!

Now, I know this might seem a bit strange, but stick with me here. I'm really not crazy!

The broccoli stem is very edible once you peel off the exterior.  In fact I think it's very tasty.

To make fries, I first chop of the exterior small bits, then peel the stems.

Once peeled, it's easy to slice them.  I like to make mine very thin like French pomme frites.  That gives more surface for crisping which you need because these aren't the same as potatoes.

They are a completely different texture so you shouldn't expect them to get as crispy as potato fries do, but they are still delicious in their own way.  You just have to be prepared that the texture will be more like home fries then French fries.

To easily coat my fries I put them into a plastic bag, pour on a bit of olive oil and add salt and pepper, and then smush them around until they are completely coated.

I pour them out onto a parchment lined baking tray, making sure they are all laying flat in one layer.  This will make sure all the surfaces brown as evenly as possible.

After heating my oven to 425'F, I bake them for 10 to 15 minutes, then, when I see they are starting to brown, I take them out, flip them over, and put them back in to bake for another 10 minutes or so.  (I can't really give you better timing than this because I find it depends on so many things - the pan you use, the size of the fries etc.)

The day I made these I served them with some fresh sole fillets I sauteed in some butter and lemon juice and with some cherry tomatoes on the side.  Made an amazingly delicious dinner ..... and gave me lots of nutrition to boot.

I like the flavor of these so much I'm going to experiment with some other ways to use these stems.  After all, I'm paying for this nutrition so why waste it!
