Paleo Ketogenic Nut-Free Breakfast Sandwich

Since I started making these Keto waffles I have found myself using them more and more.

Almond bread used to be my staple for sandwiches and all things bread-like, but now the waffles are taking their place.  Almond flour can make things heavy and it doesn't agree with everyone, but when a recipe only has two ingredients there isn't much that you can find fault with.


These waffles are of course wonderful for breakfast just by themselves.  Served with lots of butter and some sugar-free syrup they definitely hit the spot.  I always make some with added blueberries or raspberries.  It's a great way to have a bit of fruit without overdoing the sugar.

Now I've found that they make a great breakfast sandwich as well. I used to love to go to Starbuck's and get one of their breakfast sandwiches but of course now that I'm gluten and grain-free that's out of the question.  A waffle sandwich is the perfect substitute.

And the nice thing is I can put in all the same ingredients I loved in the Starbuck's ones.  When I have to leave the house in a hurry in the morning, making a sandwich to take with me only takes a few minutes, especially when I have a stack of waffles in the fridge and a bag of cooked bacon next to it.

I like to add scrambled eggs or poached eggs or fried ones, but often I'll just do bacon, cheese and tomato.  Add a good cup of coffee with some heavy cream and I don't miss my Starbuck's visits at all any more.
